Truffles of almond paste with lemon

- 300 g White almond paste
- 150 g White chocolate
- 1 Lemon bio
- 1 Vanilla pod
- 50 g Icing sugar

- Start this lemon marzipan truffle recipe by slicing the marzipan into small pieces over a salad bowl. Split the vanilla pod in half lengthwise and scrape with a knife to recover the seeds. Wash the lemon and grated it over the salad bowl with the almond paste. Add the vanilla seeds.
- Mix everything to thoroughly soak the ingredients. Form a pudding on the work surface covered with icing sugar, then cut into sections of about 1.5 cm. Form dumplings with each piece. Refrigerate for 2 hours.
- Melt the white chocolate gently in a bain-marie. Put a c. Coffee chocolate melted and cooled in the palm of your hand, then roll a truffle of almond paste to coat it.
- Do this until you have used the pellets. Decorate with golden sugar flakes.
