Ingredients
- 1,5 kg Tomato
- 100 g soft bread
- 80 g Parmesan
- 30 g Pinion
- 100 g Flour
- 100 g Butter
- 1 faisselle Huile d'olive
- 5 cl Salt and pepper
- 1 brin Fresh goat cheese
- Liquid cream
- Mint
- Pepper
Instructions
- Preheat the oven on th. 4 (120 ° C). Peel the tomatoes. Cut them in half. Seed them and put them in a dish. Salt them. Sprinkle with a drizzle of olive oil. Cook for 1 hour in the oven. Remove the water rendered during cooking.
- Remove the crust from the bread. Reduce the crumbs to the rasp. Mix these crumbs with the flour, half of the grated parmesan, the soft butter and 1 tbsp. olive oil to obtain a homogeneous paste but not smooth. Add the pine nuts and the rest of the grated parmesan cheese.
- Sprinkle the tomatoes with this paste. Bake for 25 minutes in the oven on tea. 5-6 (160 ° C). At the end of cooking, spend a few moments under the grill oven to brown well.
- Mix the cream with the fresh goat cheese and chopped mint leaves. Pepper. Serve with tomato crumbs. Delicious as a garnish for all grills.
