  • 6 Trout about 400 g each, emptied and cleaned
  • 12 Thin slices of bacon or lard
  • 4 Small green zucchini, cut into small cubes
  • 12 Green olives, pitted and chopped
  • ½ Candied lemon washed and drained, zest cut into small cubes
  • 1 Cup of chopped parsley
  • 1 Branch of rosemary leafless
  • 2 Leafy thyme branches
  • 2 Peeled and minced garlic cloves
  • 40 cl Dry white wine
  • 6 cl Extra virgin olive oil
  • Salt and pepper
  • Lemon wedges


  • Preheat the oven to 180 ° C (item 6). In a salad bowl, mix the zucchini, herbs, olives, garlic and candied lemon peel, salt, pepper and reserve.
  • Place 2 slices of prosciutto or bacon on the work surface and place a trout on it. Stuff the trout with the zucchini mixture, wrap it in the prosciutto by rolling it around the trout. Finish by stringing everything. Repeat the operation with all the trout.
  • Place the trout in a baking dish covered with baking paper, sprinkle with wine and olive oil. Place the remaining zucchini with herbs around the trouts and bake for 15 to 20 minutes. Serve hot with the lemon wedges |
