  • 4 nets Turbot (160 g each)
  • 1 Grapefruit

  • Collect fine ribbons of grapefruit zest. Blanch them twice for 2 minutes in boiling water. Refresh and drain.
  • Roll each fillet of turbot around a zest. Spread the remaining zests in a steamer basket. Put the turbot fillets on it. Cook for 10 minutes steaming. Season with fleur de sel and pepper. Serve with melted butter with grapefruit.
