  • 18 Rice cracker
  • 250 g Ground pork (loin)
  • 100 g Rice vermicelli
  • 50 g Dehydrated black mushrooms
  • 1 Onion
  • 1 Carrot
  • 1 Clove garlic
  • 1 Egg
  • 2 tbsp. soup Oyster sauce
  • 1 Frying bath
  • 6 strands Salt and pepper
  • 15 cl Mint
  • Spring roll sauce
  • Some lettuce leaves


  • Rehydrate mushrooms and vermicelli for a few minutes in hot water. Peel and chop the carrots, onion and garlic.
  • Squeeze the mushrooms and vermicelli. Chop them roughly. Put them in a bowl. Add meat, egg, sauce and vegetables, salt and pepper. Mix thoroughly.
  • Soften rice cakes in a large dish filled with hot water, then place on a clean cloth. Place a nice spoonful of stuffing at the end and roll it up by enclosing the filling. Make the other spring rolls in the same way.
  • Heat the frying bath, plunge it with 3 or 4 at a time and brown for about 10 minutes, turning them regularly to the skimmer. Dispose of them on a plate covered with paper towels.
  • Serve spring rolls with lettuce leaves, mint and spring roll sauce, or a sweet and sour sauce.
