  • 750 g Fresh tomato
  • 250 g Mild red pepper
  • 50 g Tomato concentrate
  • 4 tranches Ham
  • 1 Bulb of garlic
  • 500 g Onion
  • 1 Bone or ham rind
  • 3 c. soup Peanut oil
  • 8 Egg
  • 50 g Butter
  • Some branches Parsley
  • 1 Bouquet garni
  • 1 square Sugar

  • Start this Ainhoa-style piperade recipe by peeling the peppers. Cut them into 4. Peel the garlic and onions and slice them. Scrape and seed the tomatoes. Crush them roughly. In a casserole, heat 2 tbsp. oil and sauté garlic until lightly colored. Add onion and ham bone (or rind). Let cook under cover on low heat for 35 minutes.
  • Meanwhile, in a skillet, heat 1 tbsp. oil and fry the chillies. Then, add them to the casserole, mix well, add the bouquet garni and let simmer for 30 minutes over low heat. Pour the tomatoes and continue cooking for 15 minutes. Add the tomato paste. Rectify the seasoning. Correct the acidity with 1 square of sugar if necessary.
  • Break the eggs in a salad bowl and beat them in an omelette. Add salt and pepper. In a nonstick skillet, melt the butter. Pour the eggs stirring constantly with a wooden spatula to scramble them. At the last moment, pour them in the casserole. Arrange on plates and sprinkle with chopped parsley. Top the piperade with a slice of lightly pan-fried ham and sweet pepper.
