  • 1 roll Pure butter puff pastry

  • 180 g Sugar
  • 2 Egg yolk
  • 15 g Cornflour
  • 15 cl Milk
  • 1 C. soup Walnut liquor
  • 15 g Butter
  • 4 cl Whole liquid cream


  • The day before, bring the wine to a boil with 120g of sugar, cinnamon and zests. Lower the fire. Peel the pears. Plunge them whole in the wine. Let simmer 15 min. Book until the next day.
  • The same day, preheat the oven on th. 8 (240 ° C). Unroll the dough on a plate. Prick it with a fork. Sprinkle with 20 g of sugar. Bake. Turn the oven down immediately on th. 6 (180 ° C). After 5 minutes, place a grill on the dough and cook for 20 minutes.
  • Whip the egg yolks with 40 g of sugar. Add cornstarch and warm milk. Boil 1 min whisking. Let cool. Stir in liqueur, butter, 25 g chopped walnuts and whipped cream. Spread on the dough. Arrange the pears cut into strips. Sprinkle with remaining nuts
