Melon, feta and basil soup
- 1 kg Melon
- 200 g Feta
- 1 small bouquet Basil
- 5 cl Olive oil
- 1/2 teaspoon Mix of ground peppers
- Detail the melon flesh in small cubes or balls. Cut the feta into small pieces. Wash the basil, dry it and remove it.
- Mix half of the melon flesh with half of the basil, mixed peppers and olive oil.
- Mix the melon coulis with the feta cheese and the remaining melon flesh. Book in the fridge. When serving, sprinkle with basil leaves.
