  • 100 g Blue Auvergne
  • 20 cl Liquid cream
  • 20 g Hulled hazelnut
  • 2 Egg
  • 100 g Cake flour
  • 100 g Butter
  • 1 C. soup Granulated sugar

  • Bring the cream to a boil. Out of the fire, add 50 gr of Auvergne blue. Mix. Let cool and place this sauce in the fridge.
  • Preheat the oven on th. 6 (180 ° C). Melt the butter over low heat.
  • In a bowl, beat the eggs together with the sugar and salt. Add the flour, then warm it. Mix to obtain a smooth paste. Incorporated 50 gr of crushed Auvergne blue and crushed hazelnuts.
  • Divide this paste into the imprints of a silicone madeleine plate. Bake for 10 minutes in the oven. If necessary, proceed in several batches. Serve these madeleines still warm, accompanied by the cold blue sauce.
