A delicious recipe of Lille waffles to test for afternoon tea. Do not hesitate to vary the flours: the chestnut flour works particularly well. Use it in addition to wheat flour to balance its powerful taste.
- 1 Egg
- 200 g Flour
- 100 g Butter
- 150 g Sucre vergeoise
- 2 tbsp. soup Dark rum
- Start the recipe for Lille waffles by placing the sugar and flour together in a bowl. Melt the butter over low heat. Pour into the bowl with the egg and rum and mix with a spatula until a homogeneous paste that forms a ball. Shoot the dough and put it in the refrigerator for 2 hours, hard enough to cure.
- When the dough is hard, form two sausages 3 to 4 cm in diameter. Put them fresh again for 4 hours. At the end of this time, cut into sections 1 cm thick.
- Heat the waffle maker with its wafer plates. Place a piece of dough in each compartment and close. Press well so that the dough melts under the effect of the heat and forms a beautiful cake. The cooking is done quickly enough. The patties must be golden. You can cut them still hot to give them a regular shape.
