  • 250 g Wholemeal flour
  • 150 g Acacia honey
  • 60 g brown sugar
  • 20 cl Milk
  • 1 C. coffee Grounded ginger
  • 1 C. coffee Cardamom powder
  • 1 C. coffee Cinnamon powder
  • 1 C. coffee Five-spice
  • 1/2 c. coffee Bicarbonate food (salt department of supermarkets)
  • 5 g Butter
  • 1 pinch Cell


  • In a bowl, sift the flour, baking soda and spices. Bring the milk to a boil with the brown sugar and a pinch of salt. Mix in the honey. Pour the boiling milk over the flour, mixing to obtain a thick and sticky paste.
  • Butter a cake tin 22-24 cm long. Line it with baking paper. Pour in the dough. Tap the mold on the worktop to tamp it, then smooth it to the surface.
  • Preheat the oven on th. (150 ° C). Cook the gingerbread for 45 minutes. Unmold and let cool on a wire rack or on a bent dish. Wrap it in fresh paper or a cloth. Let it sit for 12 hours before cutting into thin slices. Grill them lightly and serve with foie gras.
