  • 1,2 kg Chubby gutted and gutted, in sections

  • Heat the oil in a casserole. Melt the chopped onion for 5 minutes over low heat. Add the gurnards. Mix 5 min. Add the tomatoes in quarters, the crushed garlic, the fennel, the laurel and the zest. Pour 1.5 liters of water. Salt, pepper. Cook for 25 minutes.
  • Skim. Remove the fennel, zest and bay leaves. Pass the soup to the vegetable mill. Add saffron, bring to a boil. Serve.
