  • 1 (800 g) Live cake
  • 130 g Small green crab
  • 1 Onion
  • 1 industry Celery
  • 1 Carrot
  • 1 Bouquet garni
  • 2 Cucumber
  • 1/2 Pepper
  • 2 tbsp. soup Olive oil
  • 50 cl Fumet of fish
  • 50 cl White wine
  • Salt and pepper


  • Heat the oil in a Dutch oven. Brown the carrot, celery and onion over 2 to 3 minutes. Add the crabs. Mix 2 minutes over high heat, crushing them. Pour in the stock and the wine. Boil the water. Salt, pepper, add the bouquet garni. Cook for 30 minutes.
  • Add the cake. Continue cooking for 20 minutes then allow to cool.
  • Filter the broth. Rectify its seasoning. Refrigerate 2 hours. Collect the flesh from the cake. Cut peeled and seeded tomatoes, peeled cucumber and half pepper in small cubes. Pour the broth into soup plates. Garnish dice with raw vegetables and crabmeat. Serve very fresh.
