  • 3 Duck breast
  • 2 Ripe and firm mango
  • 30 g Butter
  • Paprika
  • Espelette pepper
  • Salt and pepper


  • Prepare the duck breasts: cut the fat by forming braces. Season them on all sides with salt, pepper and Espelette pepper. Let stand for 30 minutes at room temperature.
  • Heat a large non-stick frying pan without fat. Place the breasts on the sides of the skin and cook for 7 minutes over medium heat. Throw some cooking fat, then turn the breasts over. Prolong the cooking 5 min on the other side. Dispose on a dish and let stand under a sheet of aluminum foil.
