Duck breast with frozen mango
- 3 Duck breast
- 2 Ripe and firm mango
- 30 g Butter
- Espelette pepper
- Salt and pepper
- Prepare the duck breasts: cut the fat by forming braces. Season them on all sides with salt, pepper and Espelette pepper. Let stand for 30 minutes at room temperature.
- Heat a large non-stick frying pan without fat. Place the breasts on the sides of the skin and cook for 7 minutes over medium heat. Throw some cooking fat, then turn the breasts over. Prolong the cooking 5 min on the other side. Dispose on a dish and let stand under a sheet of aluminum foil.
- Meanwhile, peel and stone the mangoes. Cut them into small dice. Make them quickly return to the pan with the butter by mixing constantly.
- Cut the duck breasts into slices and arrange them on the plates. Sprinkle with mango and enjoy immediately.
