Ingredients

  • 1 box Chickpeas drained (400 g)
  • 1,5 cl Soya sauce
  • 3 cl Liquid honey
  • ¼ c. coffee Cinnamon powder
  • ½ c. coffee Sweet paprika powder
  • ¼ of c. coffee Cumin powder
  • 3 cl Olive oil
  • 1 cl Lemon juice
  • 1 Red leafy chicory
  • 1 Green apple, cored and finely chopped
  • 1 Small bulb of finely chopped fennel
  • 6 Radish, hulled and finely chopped
  • 1,5 cl Lemon juice
  • 2 tbsp. soup Dijon's mustard
  • 3 cl Olive oil
  • 50 g Pecan nuts

Instructions

  • Pour the soy sauce, honey, spices, olive oil and lemon juice into a salad bowl and whisk. Add the chickpeas, mix and let stand for 15 minutes. Heat a nonstick skillet over medium heat and add the chickpeas. Brown about 5 minutes. stirring very regularly. Let cool.
  • Prepare the vinaigrette: whisk lemon juice, mustard and olive oil in a bowl.
  • In a large bowl, mix the chicory leaves, apple, fennel and radish. Sprinkle with vinaigrette and stir to coat all ingredients. Sprinkle with chickpeas and pecan just before serving.
