  • 500 g Strawberry
  • 2 Icing sugar
  • 25 cl Whole eggs
  • 50 g Semi-skimmed milk
  • 25 g Granulated sugar
  • 50 g Cornstarch
  • 1 Soft butter
  • 200 g Vanilla pod
  • 100 g Flour
  • 80 g Butter
  • 1 Icing sugar
  • 1 Whole egg
  • Pinch of salt


  • Shortbread: In a bowl, mix the flour, salt and sugar. Add the butter cut in small dice and mix with the fingertips to obtain a sandy mixture. Add the egg. Knead quickly and form a ball. Spread the dough between two sheets of parchment paper. Book at least 2 hours cool.
  • Preheat the oven to 180 ° C (item 6). Drizzle the dough into a pie pan and prick the bottom with a fork. Garnish the top with parchment paper and baking weights (ceramic or bean balls). Bake and cook for 15 minutes. Then remove the paper and the ballast, continue cooking for 10 minutes, until the dough is golden brown. Let cool.
  • Confectioner's custard: In a saucepan, heat the milk and split vanilla bean and scraped. Whisk the eggs with the sugar until the mixture whitens. Add the cornstarch, then pour the milk while whisking. Put everything back in the pan. Cook for 3 minutes until the first boil. Dispose the cream in a cold container. Add the butter and mix. Shoot in contact and let cool.
  • Wash and cut strawberries, cut in half lengthways. Spread the cream on the cooled pie shell, then spread the strawberries. Sprinkle with icing sugar. Keep fresh until ready to serve.
