  • 1 Young hen
  • 400 g White rice
  • 1 bottle Burgundy white wine
  • 2 Onion
  • 3 Clove garlic
  • 2 leaves Laurier
  • 1 industry Thyme
  • 2 Clove
  • 1 pinch Nutmeg
  • 1 to 2 tbsp. soup Coarse salt
  • 1 Egg
  • 2 tbsp. soup Flour
  • 1 Citron
  • 100 g Salt and pepper
  • 1/2 Butter
  • Lemon (juice)


  • Prepare a court-bouillon in a pot: add 2 liters of water, 1 liter of dry white wine, onions each clove, bay leaf, thyme, garlic cloves, and coarse salt .
  • Immerse the chicken in this cold or lukewarm broth. Bring to a boil then reduce the heat to simmer slightly. Place the offal (head, legs, neck) with the chicken in the liquid and cook for 2 hours.
  • In a saucepan, melt the butter and add the flour. When the flour, stirring, takes color and has absorbed all the butter, gradually add stock from the pot stirring with a wooden spoon. When the desired creaminess is obtained, salt, pepper, grated a little nutmeg and add an egg yolk diluted in lemon juice.
  • In another saucepan, cook in the remaining broth the white rice.
  • Cut the chicken, serve hot with rice and sauce.
