  • 35 g Flour
  • 2 eggs
  • 30 g Butter
  • 12 cl Crème
  • 130 g Granulated sugar
  • 2 peaches
  • 100 g Cassis
  • 40 g raspberries
  • 50 g Flaked almonds
  • Icing sugar


  • Wash the peaches. Peel them and cut them in half. Remove the kernel.
  • Bring 40cl of water with 100g of sugar, 80g of currants and raspberries to a boil. Let simmer 1 min. Off the heat, add the peaches in this syrup. Cover. Let cool.
  • Preheat the oven on th. 6 (180 ° C). In a small saucepan gently melt the butter until it turns a nutty color.
  • In a bowl, beat the eggs with 30 g of sugar. Stir in the flour, cream and lukewarm butter. Put the half peaches drained into four small soufflé molds. Divide the mixture with the eggs. Sprinkle with remaining almonds and black currants. Bake and cook for 25 minutes. Serve warm or cold, sprinkled with icing sugar.
