Ingredients

  • 500 g Raw beetroot
  • 1 Carrot
  • 1 clove Ail
  • 1 C. soup Goats
  • 4 strands Estragon
  • 1 C. soup Olive oil
  • 1 C. soup Balsamic vinegar
  • 1 C. soup Maple syrup
  • Flower of salt
  • Peppercorns

Instructions

  • Peel and cut the beets in large fries. Scrape and cut the carrot into cubes. Peel and chop the garlic.
  • Heat 1 tbsp. oil in a pan. Return carrot and garlic for 2 minutes. Add the beets and maple syrup. Cover with water at height. Cook until the liquid evaporates.
  • At the end of cooking, salt, pepper and sprinkle with vinegar. Add the capers and chopped tarragon. Keep warm.
  • Serve these beet fries and their small caramelized juice with grilled steaks.
