Ingredients

  • 200 g Fennel
  • 10 cl Liquid cream
  • 1 C. coffee Mustard
  • 1 C. soup Lemon juice
  • 200 g of fillets Salt and pepper
  • 2 pinches Bar
  • The juice of 1 Curcuma
  • 5 cl Citron
  • Oil
  • Salt and pepper

Instructions

  • Cut the fennel into small pieces, put them in a saucepan with 10 cl of water. Cover and cook on low heat for 15 to 20 minutes. When the fennel is cooked, add the liquid cream, mustard and lemon juice. Salt, pepper. Mix everything. Let cool.
  • Cut the bar in small dice. Salt, pepper. Add turmeric. Pour the lemon juice and the oil. Mix everything and marinate in a cool place for 15 minutes.
  • In verrines, divide the fennel cream and then the bar tartare.
